Early last year I had the opportunity to try out the full range of Steggles turkey products. Apart from eating a freezer-full of turkey for 4 months it also involved trying out one of their recipes. Surprisingly it went really well!
Fast forward 12 months and I was looking for something a little different to use up some chicken I had in the freezer. So I decided to give the recipe another go, this time using chicken as the main ingredient. It tasted just as good and is a most awesome way to have a fun, easy meal that the whole family will actually want to try! Here’s how to make some freakin’ awesome soft chicken tacos:
2 chicken breast fillets, cut into strips
1 tsp cumin
1 tsp smoked paprika
1/4 cup lime juice
3/4 cup mayonnaise
1 tsp mexican seasoning
1 small red onion, finely diced
2 Roma tomatoes, diced
1 small avocado, diced
2 tsp chopped coriander
2 tbsp olive oil
250g packet wraps (we used the gluten free ones from Coles)
225g packet fresh coleslaw salad
Handful of shredded cheese

1) Combine cumin, smoked paprika and 1 tbsp of the lime juice in a bowl. Add chicken and toss to coat. Refrigerate for 10 minutes to marinate. Meanwhile, combine mayonnaise, mexican seasoning and 1 tbsp of the lime juice in another bowl. Set aside.
2) To make the salsa, combine onion, tomatoes, avocado and coriander in a bowl. Drizzle with olive oil and remaining lime juice, stir to combine.
3) Spray a large frying pan with oil and place over medium heat. Cook the chicken in two batches for 5-6 minutes, turning frequently, until cooked.
4) Top wraps with coleslaw, chicken pieces and salsa. Drizzle with mayonnaise dressing and finish off with shredded cheese.
It is easy, tasty and very, very moreish. The longest part of the preparation is chopping up the ingredients – it really is something that would be perfect for a lazy Friday night meal (plus MUCH more healthy than resorting to takeaway or oven baked convenience). Points too for being gluten free (just ensure you use GF mayonnaise and GF wraps for the soft tacos).
